Core-collapse supernovae and binary neutron star mergers featuring the birth and the death of neutron stars are abundant sources of MeV neutrinos as well as sites for heavy element nucleosynthesis above iron via the r process. Despite tremendous progress made in both theoretical and observational aspects over the past decades, quite a number of challenges remain to be overcome to offer robust theory predictions that can be used to extract physics properties of the system from their multimessenger signals. In this talk, I'll mainly discuss recent advances in i) our improved understanding and modeling of neutrino quantum kinetic transport in dense matter, and 2) various predictions toward intriguing signatures of the creation of the r-process nuclei.
